Oatmeal Cups

Ready, Set...Yummy!
Here's a recipe I made up tonight that turned out pretty well!  These are super yummy, and will be great for breakfast...they are even healthy!  Only 146 calories/cup!

Oatmeal Cups
5-10 minutes prep.
20 minutes in the oven

Ingredients:
1 mashed banana
1/2c dried honey blueberries (recipe here, dried blueberries work too)
1/2c dates
1/2c raisins
3c oats
1c applesauce
1 egg
1/2c almond milk
1/4c brown sugar
1tsp baking soda
cinnamon (to taste)
nutmeg (to taste)
salt -just a pinch

Preheat oven to 350 degrees.  Mix everything together.  Pour or scoop into lined cupcake tin -fill each tin.  Bake for 20 minutes.  Enjoy! :)

You can add just about anything to these: almonds, walnuts, dried apricots...ok, any dried fruit really!, etc.

I kept some out for breakfast tomorrow, and I bagged them up in the freezer too.  I feel good giving these to my family.  Lots of goodness in these little suckers!  Enjoy :)
